Chicago Color Run 2012 with a few LB ladies - the most fun race we’ll ever do! The color literally never stopped!
All set for the Color Run tomorrow. This first race I’ll run that’snottimed. This is going to be so much fun!!
The makings of the panzanella salad I made last night… fresh and tasty salad for summer.
Toast cubes of Italian bread.
Soak tomatoes and red onion in red wine vinegar, olive oil, salt, pepper and garlic for 30min to let the juices come out.
Toss in cucumbers, yellow pepper and parsley. Soak for 15min.
Toss in bread cubes right before serving.
There’s two little green tomatoes on my plant… now we just need to keep it alive until the ripen!
My little balcony garden is growing - cherry tomatoes, cilantro, basil and parsley (except one of these herbs has yet to pop up! Growing up we always had a nice big garden in the backyard growing anything from corn to lettuce to zucchini to carrots to peppers - name it and we’ve probably tried it. I still think I have the school project I did on our garden from elementary school. One day I’ll have a big garden, but until then these little pots will do :)
The downtown outdoor farmers market is back. And my favorite quote of the morning was a gentleman passing by one of the standard vendors saying “so glad you’re back. We missed you guys.” Gives this big city a small town feel. (Taken with instagram)
One of my favorite things about our new apartment is the spacious kitchen. There’s plenty of storage and counter space for both of us to be in there cooking and tonight we tried onion rings. This was the first time either of us ever tried frying something so there was a bit of trial and error, but in the end the recipe is super simple and once you master the oil temperature it’s a breeze.
Recipe: Mix flour with generous amounts of salt and pepper in a dish. Mix sour cream and buttermilk (or in my case a buttermilk replacement mixture of milk and sour cream) in a second dish. Soak the yellow onions in the liquid mixture for a few min. Dip into the flour mixture. Drop into the hot oil (medium/ high works best) and cook until deep golden brown. Place on paper towels to dry. Enjoy will your favorite dipping sauce or as a topper for your hamburger.
